Jamaican Spiced Black Bean Burgers with Cilantro-Lime Mayo

It’s Meatless Monday and what better way to enjoy a vegetarian meal than with these Jamaican Spiced Black Bean Burgers? Technically theses aren’t a baked good like I usually share, but we like these burgers so much that I wanted to share them with you. They are also fantastic on my Easy Burger Buns. We eat vegetarian a few times a week and I find that I’m my most creative when coming up with meatless meals.

The basic recipe for these burgers came from a cooking camp that my daughter did, but I jazzed them up a bit by adding nutmeg, allspice and cumin and ginger for a Jamaican twist. You can also add chopped scotch bonnet or jalapeno peppers to the burgers for some spice, but I leave them out so that the kids can eat these too. My husband and I then have ours topped with either hot sauce or sliced hot peppers for heat.

The burgers are easily put together ahead of time and then fried for a few minutes on each side in a skillet. I then like to melt some cheese on them when they are almost done cooking. I serve them on a toasted bun that has been slathered with a Cilantro-Lime Mayo, and some lettuce, tomato and pickles. Paired with a salad, they are an easy Meatless Monday meal!

You can make the burger patties ahead of time and keep them in the fridge until you are ready to cook them.

For the Burgers
– 4 tbsp vegetable oil, divided
– 1 small onion, finely diced
– 1 cup grated carrot
– 1 inch piece of ginger, minced
– 1/2 cup frozen corn kernels
– 2 cloves garlic, minced
– 1 tsp ground cumin
– 3/4 tsp nutmeg
– 3/4 tsp allspice
– 1/2 tsp salt
– pepper to taste
– 1 can black beans, drained and rinsed
– 1 egg, lightly beaten
– 3/4 – 1 cup bread crumbs
– 4 square slices cheddar or American cheese, optional

For the Mayo
– 1/3 cup mayonnaise
– juice of 1 lime
– 2 tbsp chopped cilantro
– 1/2 tsp chipotle chili powder

For the Burgers
1. Heat 1 tbsp oil in a 12-inch skillet over medium heat.
2. Add onion, carrot and ginger. Saute until vegetables are soft, about 5 minutes.
3. Add garlic, corn and spices. Saute for 2 minutes. Remove from heat to cool slightly.
4. In a large bowl, mash beans with a potato masher. Stir in egg until combined.
5. Stir in onion mixture and enough breadcrumbs so that mixture sticks together but is no longer wet. Mix to combine.
6. Form into 4 equal patties. Make ahead: place patties on a plate and keep covered in the fridge until ready to use.
7. Heat remaining 3 tbsp oil in 12-inch skillet over medium heat until smoking.
8. Add patties and cook 3-5 minutes per side until browned.
9. When 2nd side is almost cooked, place a slice of cheese on top, if using, and cook until cheese is melted.
– Served on a toasted bun with Cilantro-Lime Mayo, lettuce, tomato, pickles and hot sauce, if desired.

For the Mayo
– In a small bowl, stir together mayonnaise, lime juice, cilantro and chipotle powder. Cover and keep chilled in the fridge until ready to use.
