Shortbread Cookies

It’s not Christmas in our house until I bake a batch (or two) of my grandmother’s shortbread cookies! This simple recipe produces a cookie that is balanced and crumbly as shortbread should be. The addition of rice flour, lowers the gluten content, giving the cookie it’s “short” texture and low and slow cooking ensures a perfectly dried out cookie without caramelizing the sugar in the cookie.

Salted Dulce de Leche Brownies

This is a variation on my Quick and Easy One Bowl Brownies. I had some Homemade Dulce de Leche on hand and decided to try topping my brownie batter with spoonfuls of the dulce de leche and sprinkle on some sea salt. The results were amazing! If you’ve never had Dulce de Leche, it’s like a tangy, creamy caramel that is made from sweetened condensed milk. You can easily make it from the recipe linked above.

Brown Butter Blondies

Blondies are a combination of the best part of chocolate chip cookies and brownies. They taste like a chocolate chip cookie and have a crispy exterior like chocolate chip cookies, but the middle is gooey and fudgy like a brownie. To make my blondies extra flavourful, I brown the butter before adding it to the batter. An optional sprinkle of sea salt over the top takes this treat to the next level!
