It’s not Christmas in our house until I bake a batch (or two) of my grandmother’s shortbread cookies! This simple recipe produces a cookie that is balanced and crumbly as shortbread should be. The addition of rice flour, lowers the gluten content, giving the cookie it’s “short” texture and low and slow cooking ensures a perfectly dried out cookie without caramelizing the sugar in the cookie.

Peanut Butter Cup Cake

This cake features a peanut butter cake, topped with peanut butter frosting. The whole cake is then topped with chocolate ganache. To achieve the ridges that give this cake the peanut butter cup look, I used the origami technique of pouring ganache over accordion-folded card stock and pressing it to the sides of the cake. Once the ganache was set, I removed the paper to reveal the ridges.

Blondies are a combination of the best part of chocolate chip cookies and brownies. They taste like a chocolate chip cookie and have a crispy exterior like chocolate chip cookies, but the middle is gooey and fudgy like a brownie. To make my blondies extra flavourful, I brown the butter before adding it to the batter. An optional sprinkle of sea salt over the top takes this treat to the next level!
