Easy Chocolate Cake

An easy, moist chocolate cake that you can put together in less than 5 minutes! Serve with Quick Chocolate Frosting

Ingredients
  • cup granulated sugar
  • cup (5 oz/142g) all-purpose flour
  • 1/2 cup cocoa
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup buttermilk (or 1/2 cup milk + 1 tsp vinegar)
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • 1/2 cup boiling water
Instructions
  1. Heat oven to 350F
  2. Grease 8 inch cake pan and line with parchment paper.
  3. Sift sugar, flour, cocoa, baking soda, baking powder and salt together in medium bowl.
  4. In larger bowl, or the bowl of a stand mixer, beat together eggs, milk, oil and vanilla.
  5. Add flour mixture and mix on medium speed for 2 minutes.
  6. Add boiling water and mix on medium speed to form a smooth batter.
  7. Pour into prepared pan and bake until toothpick inserted into cake comes out clean, about 30-40 minutes.
  8. Let cool in pan 10 minutes before turning out onto cooling rack to cool completely.
